Meal Plan Monday

Monday - Black Bean Burritos w/guacamole and spanish rice

Tuesday - BBQ chicken wings from Polyface, cubed potatoes cooked in bacon fat and Blueberry salad (tweaked to make it less processed)

Wednesday - Down Home Goulash and corn on the cob. I'm also making a meal for our good friends, Kyle and Lindy, who had a baby this weekend. I'm making them Chicken and Rice Casserole (tweaked to make it more healthy), bread and cut watermelon.

Thursday - Taco Salad (lettuce, Polyface beef, soaked pinto beans, tomatoes, guac, raw cheese, tortilla chips)

Friday - Salmon and salad

Saturday - Fruit and berry soup (lots of fresh fruits all pureed together and chilled)

Treat - Peanut Butter Bars This will be the first sugar I've had in 2 weeks! Go me!
