Meal Plan Monday

Monday: Breakfast - green smoothies
Lunch - homemade taquitos w/guacamole
Dinner - Potato Soup

Tuesday: Breakfast - Polyface eggs and bacon
Lunch - leftover taquitos w/guac
Dinner - salmon w/ veggies

Wednesday: Breakfast - Apple Cinnamon Oatmeal
Lunch - Salad w/chicken strips, eggs, veggies and raw nuts
Dinner - Homemade mac n cheese w/Polyface hot dogs

Thursday: Breakfast - Eggs
Lunch - Chipotle
Dinner - Chili w/raw cheese

Friday: Breakfast - Smoothies
Lunch - Salad w/salmon
Dinner - leftover chili

Potato Soup
2 cups unpeeled potatoes, diced
1 small onion, finely chopped
1 1/2 cup milk (I'm using raw goat milk)
3 T. butter
1 celery stalk, finely diced
2 T tapioca starch
1/2 tsp sea salt
frozen corn

Cook potatoes in water until soft, 25-30 minutes. Drain cooking water and add 1 tsp salt to potatoes, then make them slightly with a fork. Melt butter in saucepan (do this while potatoes are cooking), add celery and onion. Saute for at least 5 minutes. Add starch and 1/2 tsp salt and stir until smooth. Add milk and corn, stir and cook until thickened. Stir mixture into potatoes. Add more milk depending on desired consistency. Garnish with bacon crumbles.

Macaroni and Cheese (this recipe is to feed a huge crowd, so I will be reducing it)
2 lb. brown rice elbow noodles, cooked in chicken broth for added nutrition
1 c. soft butter
1 c. arrowroot
1/4 c. dry mustard
2 T. sea salt
1/2 gallon raw milk
40 oz. raw milk cheese

Drain the pasta and put in a large bowl. Add butter, mix well. Combine arrowroot, mustard, salt and 2 cups milk. Add rest of milk, then pour into the pasta. Mix together well, then add cheese. Divide into pans, freeze in portions, or bake at 350 for 35 minutes. A nice addition to this is grass-fed all-beef nitrite/nitrate free hot dogs. Add sauerkraut as a side dish and you've got a great meal!

Green Smoothie
2 handfuls spinach
1 handful kale
3/4 cup juice (I use orange juice or fresh apple juice)
Blend and then add in:
handful of blueberries
1 banana
supplements - probiotics, cod liver oil, etc.
Blend


Apple Cinnamon Oatmeal
Overnight soak:
2 cups oatmeal (not the quick cooking kind)
2 cups of water
a splash of whey

In the morning bring to a boil:
2 cups apple juice/cider

Stir in:
oatmeal
one apple peeled, cored, and chopped
a healthy sprinkle of cinnamon
and cook for five minutes or to your liking. Serve with butter and cream. Yum!

Taquitos
Corn tortillas
soaked black beans
raw cheese

Mash up the beans. Fill tortillas with beans and cheese. Roll up tortillas. Brush with oil or egg wash. Cook in oven at 425 for 10-12 minutes

Tell me about home-made taquitos? I've seen you post about them before, and they sound fun and yummy! And the potato soup recipe looks awesome. I'm definitely going to try it soon! You can never have too many good soup recipes for sure!
